Iran Takes Major Step to Strengthen Saffron Value Chain

Iran, in collaboration with the Food and Agriculture Organization of the United Nations (FAO), launched a key initiative to improve the saffron value chain. Consequently, the effort aims to boost quality, innovation, and global competitiveness in one of Iran’s top agricultural sectors.

From November 25 to 29, a national workshop brought together farmers, processors, cooperatives, traders, and experts. During the event, participants focused on modern cultivation, post-harvest handling, traceability, safety, digital branding, and marketing. Thus, strengthening the saffron value chain became the main objective.

The opening ceremony included remarks from Mohammad Mehdi Boroumandi, Deputy Minister for Horticulture at the Ministry of Agriculture-Jahad, and Farrukh Toirov, FAO Representative in Iran. Both also stressed the need to tackle climate pressure, water scarcity, and rising global competition.

Moreover, Toirov highlighted the importance of innovation in meeting consumer demand. He mentioned instant dissolved saffron, pre-dosed packaging, and smart dispensing systems. “Therefore, these innovations will strengthen the saffron value chain and expand Iran’s global market,” he said.

Officials additionally emphasized quality integrity, transparency, and branding to maintain international trust. Toirov further noted that social media and online branding can significantly boost Iranian saffron’s global visibility.

Iran remains the world leader in saffron production, supplying 85 to 90 percent of global output. Furthermore, the crop supports rural livelihoods, particularly in Khorasan Razavi and South Khorasan, and preserves generational farming knowledge.

Saffron also contributes to sustainable agriculture in arid regions and enhances food security. The FAO initiative, “Control of Food Authenticity and Management of Food Supply Chain for Successful Achievement of SDGs – Piloting Saffron Value Chain,” strengthens authenticity, governance, and quality across the sector.

FAO reaffirmed its commitment to helping Iran build a competitive, innovation-driven saffron sector. Officials also supported the proposal for an International Saffron Day on the UN calendar.

By combining traditional expertise with modern technology, Iran aims to reinforce its global saffron reputation. Consequently, strengthening the saffron value chain promises lasting benefits for farmers, exporters, and international consumers.
